Produk Inovasi Pengolahan Buah Salah
Abstract
Sidimpuan snake fruit (Salacca sumatrana Becc.) is a superior local commodity, with its main production center located in South Tapanuli Regency. Sihopur Village is one of the producers of Sidimpuan snake fruit, where a significant portion of the population works as snake fruit farmers. The fruit flowers and bears fruit throughout the year. However, during harvest, not all fruits can be sold—some are sorted out due to not meeting market standards. These unsellable fruits are often discarded. One way to address this issue is by processing the snake fruit into value-added products. The purpose of this community service activity was to utilize the sorted-out snake fruits by processing them into high-value products through training aimed at enhancing the knowledge and skills of the community, thereby fostering an entrepreneurial spirit. The results of the activity showed that community knowledge and skills increased after participating in the training. The processed snake fruit products produced in this activity included snake fruit anchovy sambal.
